How to use chia seed, the ancient South American superfood

Chia seed is very nutritious and you'd hardly know it's in your food. You can sprinkle it on your cereal or on salads, add it to baking (e.g. breads and muffins) or use it in liquid form. When chia seed is soaked in water the seeds swell and a gel is formed. You can add this to smoothies, dressing and juice.

It has a high content of protein, Omega 3 & 6 fatty acids and fibre, as well as antioxidants and trace vitamins and minerals. These fatty acids are essential, because our bodies can't make them, but we need them to stay healthy.
