Creamy Coconut and Chia Seed Breakfast Pudding
Chia Seed is a good source of Omega 3!
Serves 4
Ingredients
- 400ml tin coconut milk
- 1/2 cup (35g) Alison’s Pantry Shredded Coconut
- 1/3 cup (40g) Alison’s Pantry Chia Seeds
- 2 tbsp. honey or maple syrup (if using honey heat through just enough to turn into liquid)
- 1 tsp ground cinnamon
- 1 tsp vanilla extract
Method
- Place all ingredients in a jar or glass bowl
- Mix well and place in the fridge overnight (or at least 2 hours)
- Serve with fruit and extra cinnamon
