Festive Fruity Quinoa Salad with Spicy DressingALP0180-xmas-web-quinoa-salad

Serves 6

1 1/4 cups Alison’s Pantry Quinoa
2 1/2 cups water
1/2 cup prepared Alison’s Pantry Fruit Mince – Kiwi Style (see Recipe)
1/2 cup Alison’s Pantry Pine Nuts or Sliced Almonds, toasted
1/4 cup Alison’s Pantry Sunflower or Pumpkin Seeds, toasted
2 cups fresh spinach, coarsely chopped
1/4 cup fresh parsley, chopped
2 Tbsp fresh mint, chopped
Salt and freshly ground black pepper
150g feta cheese, crumbled
Tomatoes are optional

Spicy Dressing:
3 Tbsp white wine vinegar
1 tsp hot mustard
Good pinch chili powder
1/4 cup extra virgin olive oil

 

1. Place quinoa in a fine-mesh strainer and rinse with plenty of cold water for 2-3 minutes. Drain well. Heat water in a large saucepan. Once boiling, add quinoa and cover the pan. Turn the heat down to low and simmer for 15 minutes.

2. Turn off the heat and leave the quinoa to sit, covered, for five minutes. Drain off any excess liquid and spread the quinoa over a large plate to cool.

To make spicy dressing
1. Combine all ingredients in a jar and seal with a tight-fitting lid. Shake well to amalgamate. Once the quinoa has cooled, transfer to a bowl and toss with dressing, so the quinoa absorbs the flavors.

2. Add the fruit mince, nuts, seeds, spinach and herbs then season with salt and pepper and toss well to combine. Serve in a large salad bowl or on a platter, sprinkled with feta cheese.
